The Water That Changes Everything – Breweries' Forgotten Ingredient

hy does the same beer recipe taste so different across three Norwegian breweries? I traveled to a mountain village, a coastal town, and an inland city to taste my way through water's secrets – and found answers that changed my understanding of beer forever.

I remember the day I realized I had overlooked the obvious. As a brewer, I had spent years fine-tuning malt, hops, and yeast. But the water? The water was just... water.
It was only when I tasted the same IPA recipe brewed with three different water sources that everything clicked. The minerals in the water – or the absence of them – didn't just change the taste. They reshaped the entire character of the beer.
Today, water accounts for over 90 percent of the beer in your glass. Yet we rarely talk about it. Time to change that.

The Mountain Water That Sharpens the Hops

First stop: Geiranger. Here, Bølga IPA is brewed with meltwater from Storfjorden, filtered through rock for thousands of years. The water is almost mineral-poor – almost distilled clean.
When I taste it, it's as if someone has turned up the contrast on the hops. The citrus notes come forward with a precision I rarely experience. The reason is simple: without calcium and magnesium as a buffer, the hop bitterness has free rein.
The brewmaster explains it this way: "With soft water you get a cleaner, sharper bitterness. It works brilliantly for hop-forward styles like IPA, but can become too aggressive in darker beers."

The City Water That Adds Body

Next, to Drammen, where Haandbryggeriet brews with municipal water from Eikeren. Here the story is different. The water is medium-hard, with a good presence of calcium and sulfate.
"Calcium helps enzymes in the mash work more efficiently," the brewmaster explains as we stand by the brew kettle. "It gives better yield, but more importantly: it builds body in the beer. The mouthfeel becomes fuller."
When I taste Haandbryggeriet Fyr og Flamme IPA, I notice the difference immediately. The same hops as in Geiranger, but here they have a rounder, more balanced character. The bitterness is still distinct, but it feels integrated – part of the whole rather than an assault.

This is also where Haandbryggeriet Sumava Dark Lager truly comes into its own. The Czech malts find a perfect interplay with the water's mineral balance, and the result is a dark lager with depth and finesse that is difficult to achieve with soft water.

The Coastal Water That Gives Character

Final stop: Frøya, right out by the sea. Bryggeriet Frøya draws its water from a groundwater well just a hundred meters from the ocean. The water is hard and mineral-rich, with traces of both magnesium and chloride.
"People think we brew with seawater," the brewer laughs. "But it's fresh water – just with a mineral composition influenced by the sea. The chlorides give a softness that suits malt-forward styles perfectly."
Draug Bokkøl is the proof. Here the malt takes center stage, with notes of caramel and nuts that come through thanks to the water's profile. The chlorides enhance the sweetness while simultaneously dampening perceived bitterness. A perfect winter drink when you want something warming.

How the Minerals Work Together

Let me break it down: calcium lowers pH and creates better conditions for enzymes. Magnesium adds sharpness. Sulfate accentuates bitterness and dryness. Chloride lifts the malt's sweetness and adds fullness in the mouth.
For a classic British bitters you want high calcium and sulfate – think Burton-on-Trent. For a German pilsner you need soft water with low mineral content. For a robust stout? High carbonate to balance the malt's acidity.
That is why the same recipe can produce three entirely different beers depending on where it is brewed. Water is not just a medium – it is a co-creator.
It also means that breweries that know their water can use it as a tool. They can amplify or dampen specific flavors, build structure or create lightness. When you know what you are working with, you can shape the beer according to the water's nature – not against it.

What Does This Mean for You?

Next time you stand in front of the shelf, think about where the beer comes from. A brewery that knows its water and brews with it – not against it – will always deliver better beer.
Looking for sharp, clean hops? Look for breweries in mountain areas with soft water. Want a full-bodied malt character? Coastal breweries and those with medium-hard water are often the safer bet.
And if you brew at home? Start by testing your water. It is the cheapest and most effective step you can take to improve your beer. Many municipalities publish water analyses on their websites – that is a good starting point.

Can You Taste the Difference?

I invite you to a small test: buy two beers of the same style from different breweries. Don't look at the alcohol percentage or hop variety first – look at where the brewery is located. Taste them side by side. You will probably notice the difference.
For me, this insight changed everything. Now I read a brewery's location as an important part of a beer's DNA. Mountain water, city water, coastal well – every water source tells its story in the glass.
Water is not just an ingredient. It is the very foundation.
And when the brewer understands their water, masters the ingredients, and lets them work together rather than against each other – that is when the magic happens. Then you don't just get good beer. You get beer that tastes of the place it comes from.
That is what makes Norwegian craft beer so exciting. We don't just have skilled brewers – we have water from a thousand different sources, each with its own unique profile. It is a richness we have only just begun to explore.
