There is a point where the chemistry of wine changes character. Not through aging, oxidation, or decanting — but through cold. Extreme cold. When the glass tips toward freezing point, something fundamental happens to how we experience taste, texture, and balance. Sicilians have known it for generations. Now the rest of the wine world is starting to catch up.
When the wine becomes granita
In Catania, on Sicily's eastern coast, granita di vino is served as a matter of course at dinner. You take a light white wine — often based on Carricante or Catarratto — pour it into a shallow dish, and scrape it frozen into a coarse, airy crystal mass. The result is not a drink, but a taste shock: the acidity cuts more clearly, the fruit becomes almost exalted, and the sweetness — if it exists — retreats entirely.
The chemistry behind it is simple. Alcohol freezes at minus 114 degrees, water at zero. As the temperature drops toward zero, the water freezes first and forms ice crystals that concentrate the rest of the liquid: alcohol, acids, sugars, phenolic compounds. At the same time, the cold numbs the heat receptors on the tongue — those that normally register both the warmth of alcohol and tannins as warming. What we are left with is an almost surgically precise tasting experience: purity, acidity, fruit.
The sommelier's freezer
In recent years, a handful of sommeliers around the world have begun experimenting with ice-cold served white wines. Not just chilled — ice-cold. The method varies: some use an hour in the freezer, others create a snow mixture around the bottle, some go so far as to freeze the glass and let the wine form small ice crystals as it is poured.
The goal is not to hide flaws, but to highlight specific characteristics. A vino bianco from Etna's volcanic soil — such as Le Vigne di Eli Etna Bianco 2022 — has naturally high acidity and a mineral core that can feel sharp at room temperature. Lower it to two or three degrees, and the balance shifts: the acidity becomes integrated, the minerality emerges as a distinct, saline undertone, and the fruit — citrus, white peach — takes on an almost crushing intensity.

The same applies to certain German Riesling Kabinett wines. Schäfer-Fröhlich Felseneck Riesling Kabinett 2023, with its lower alcohol of seven percent and pronounced acidity, can at eight degrees feel almost tart. But lower it to one or two degrees — on the verge of frozen — and the sweetness returns, the acidity rounds out, and the aromatic esters are lifted forward with an almost perfumed precision. Apple, apricot, honey — everything becomes clearer.
What happens to red wine?
Theory suggests that red wine is not suited to freezing. Tannins become harder, fruit retreats, balance collapses. But this applies primarily to fuller-bodied reds with ripe tannins and warm vintages. Light, acidic reds — particularly those with low alcohol and plenty of fresh fruit — can actually benefit from cold.
Sicilian red granitas are traditionally made from Nerello Mascalese, Etna's signature grape variety. The wine is frozen, scraped, and served as a starter or palate cleanser between courses. The result is unexpected: the red fruit — strawberry, wild raspberry — takes on an almost refreshing quality, and the tannins are strongly toned down. What remains is more a fruit sorbet than a wine, but with a complexity and dryness that no dessert can match.
The technique at home
You do not need a granita machine. The method is simple:
Choose a white wine with high acidity and low alcohol, under twelve to thirteen percent. German Riesling, Austrian Grüner Veltliner, Sicilian white — all work. Pour the wine into a shallow metal dish; a rimmed baking tray is perfect. Place in the freezer for two to three hours. The wine should not become completely solid — you want a mixture of liquid and ice crystals. Scrape with a fork to create a coarse, crystalline texture. Serve immediately in chilled glasses.
For a simpler approach: take a bottle of white wine and place it in the freezer for forty-five to sixty minutes. The wine should be ice-cold, but still liquid. Pour into a room-temperature glass — not pre-chilled, as that causes too rapid warming — and drink quickly. You will notice that the first sips have an almost shocking clarity, before the wine warms up and settles back toward normal.
When the technique fails
Not all wines can handle extreme cold. Full-bodied Chardonnay with oak barrel aging — such as many Burgundies — loses its creamy texture and becomes flat. Sweet dessert wines collapse in flavor; the sweetness disappears, and what remains is a thick, almost syrupy consistency without balance.
Nor is this a technique for everyday use. Frozen wine loses nuance, complexity, the slow transitions that make great wine great. But for light, everyday white wines with too much acidity? For a light red on a late summer evening? For an aperitif that should wake the palate before a rich, salty dinner? Then the freezing point is a tool worth knowing.
What the Sicilians understood long ago is simple: cold is not just preservation. It is flavor amplification. And when the wine freezes in the glass, it opens up in ways heat never can. In a Norwegian winter, when the temperature outside plunges and the kitchen is warm, a frozen white wine can be exactly what is needed to awaken the taste buds. Not as a trick, but as a technique — one that deserves its place at the table.
